Mae's lasagne - take 2

ppsst ive used mozzarella cheese on the first one .. hehe
It taste and look alot better than the previous one. I might not have put enuf vegies but hey it sure does taste yum. now now ... comments and suggestions are welcome from the food critique

Simply Lasagne

To Cheat: Buy bottle spaghetti sauce, any type you want. Use bottled white sauce for lasagne too ( Dolmio makes white sauce for lasagne and I'm sure there are other makes too ).

Brown meat gently , add minced garlic and chopped onion, fry for 10 minutes till onions turn soft. Add diced carrots ( I like them rather small cos it soaks up the flavour better ).
In the meantime, griddle sliced aubergine with olive oil, then some red peppers or whatever colour you prefer. Steam some spinach for the last layer.

To assemble:
In a pyrex caserole, pour half the meat sauce first then arrange half of grilled aubergine and half of pepper. Followed by 3 lasagne sheets ( however many that will fit the dish ). Pour half of white sauce . Repeat with meat sauce up till lasagne sheet. BUT do not pour the white sauce until you've spread some steamed spinach on the last lasagne sheets. THEN the white sauce and sprinkled with grated cheddar cheese !!

Cover with aluminium foil then bake in 180 degree C for 45 minutes, remove the foil then bake for further 15 minutes or till the cheese is bubbly, crispy and just hmmmm.... yummy ! Serve with fresh salad, a bit of tabasco and plenty of freshly cracked black pepper...
